Low-calorie quinoa tabbouleh... so delicious.

So this is a vegetarian dish that is super filling and the best part...
80 calories a cup
Here's the recipe...
1/2 cup of cooked quinoa, room temperature
3 bushels of parsley, minced
About 15 leaves of mint, minced
Half an onion, minced
Two medium tomatoes, minced
One large cucumber, minced
1/4 cup lemon juice
1/4 cup extra virgin olive oil
1 tsp of salt (or more to taste)
1 tbsp minced garlic (optional)
- I cooked the quinoa by the directions and set it aside to cool.
- I minced the parsley and mint together in a food processor and put it in a bowl.
- Then one at a time, I lightly minced the onion, tomatoes, and cucumber separately in the food processor. I pulsed these so the chunks would be a bit bigger. I put the veggies in the bowl with the parsley and mint.
- In a small bowl, I whisked together the lemon juice, olive oil, and salt and then placed it in the bowl with the greens and veggies.
- Lastly, I added my cooled quinoa and garlic to the bowl of parsley, mint, veggies, and sauce and mixed thoroughly (I made it in a Tupperware so I could mix it with the lid on as well). You want everything to be combined evenly.
- Enjoy! 80 calories for a full cup. Make sure you stir before serving each time because the juices will settle to the bottom and the juices are what make it tasty!
